General characteristics

Materials:
400 grams of crucian carp and 400 grams of tofu.
Seasoning:
Shaoxing wine 15g, onion 3g, ginger 1.5g, refined salt 2g, monosodium glutamate 2g, a little wet starch, and a proper amount of salad oil.
Exercise:
① Cut the tofu into 5 mm thick slices, soak in salt water for 5 minutes, and drain for later use.
(2) Scales and viscera of crucian carp were removed and marinated with Shaoxing wine for 10 minute.
③ Heat salad oil in the vessel, saute ginger slices, fry fish on both sides, add appropriate amount of water, simmer for 25 minutes, then add tofu slices, add a little wet starch after seasoning, and sprinkle with chopped green onion. You can also sprinkle with shredded lettuce according to your taste.
