Xi'an, referred to as "Hao", was called Chang'an and Haojing in ancient times. It is located in the middle of the Guanzhong Plain, bordering the Wei River to the north and the Qinling Mountains to the south. Chang'an is moistened by eight rivers. The Roujiamo is a combination of cured meat and white steamed buns, which complement each other and bring out their respective flavors to the extreme. One of the Eight Weird Oddities of Shaanxi, "Noodles Like Trouser Belts" refers to this kind of noodles. It is named after the biang, biang sounds during the making process. The pink soup of sheep blood pays attention to "numbing, spicy, salty, fragrant, light and tender". The sheep blood is fresh and smooth, without any fishy smell. The noodles are slender, even in thickness, with fresh and fragrant seeds, red oil floating on the noodles, hot and sour soup, tough and refreshing, suitable for all ages. On important occasions such as weddings and funerals, festivals, children's birthdays, and old people's birthdays, a bowl of steamed noodles is indispensable.
The spicy meatball soup is made from beef and mutton bones.
