Fancy jiaozi —— Steps of 35 Kinds of Bagging Methods in jiaozi

1. Please refer to my other cookbook "All Steps to Wrap jiaozi" for the specific operation methods of dough mixing and stuffing, so I won't go into details here. This recipe only explains the wrapping method of fancy jiaozi ~

2. Bian jiaozi takes out a piece of dough, puts stuffing in the middle, folds the dough in half, and rubs the semi-circular dumpling wrappers together without any patterns, which is the most basic jiaozi.

3. First, wrap a flat jiaozi with corrugated jiaozi, and then pinch the ripples on the edge of dumpling skin with forefinger and thumb. If you can't pinch the pleats, you can try this, and the effect is still good.

4. Wrap a flat jiaozi first, then pick up the edge of the dumpling skin with your forefinger and thumb, and knead it by folding in turn. There will be pushing, pinching, pushing and pinching. Keep the distance between each pleat, and jiaozi will be beautiful.

5. Lock jiaozi up first or wrap a flat jiaozi (see, how important is it to beat jiaozi? ) Then, point the edge of jiaozi at yourself and fold in from the outside in the corner. Starting from the second pass, twist the dough inward 180 degrees each time, and press it on the previous pleat in turn, and the last pleat can be closed. Sewing is also a basic mode. If the dough is bigger, it will be a leek box.

6. Crescent Dumplings Knead the dumpling skins together on opposite sides, knead one-third of the side edges, fold and knead the redundant dumpling skins down to the midpoint position in turn, and also fold and knead the redundant dumpling skins down on the left side in turn. Similarly, when finished, the back of jiaozi is neatly folded, like a crescent moon.

7. Crescent Moon Dumplings This jiaozi actually wanted to make shrimp dumplings, but his head was short-circuited and he shot it wrong = _ =. . . The difference between this one and Crescent jiaozi is that the folds of the dough on both sides are not specially adjusted, so the finished product drawing will be more casual, and of course the wrapping method will be faster. Shrimp dumplings don't need to be folded in half. Knead them first. Instead, use the middle finger to push the dough from one side and knead it into a round belly behind jiaozi in turn, and the half-moon sector kneaded in front is very small. The method is similar to making steamed buns. The technique can refer to the picture of steamed stuffed bun below.

8. Small dumplings are actually the way to wrap buns. . . Some dumplings will wrap steamed dumplings like this, and of course, people like me who are easy to pinch can cook them. Spread the dough flat, knead a corner, then fold the edge of the dough inward with your middle finger and knead the dough with your thumb. If you only use your thumb to knead the dough brought by your middle finger, a hole will be left in the middle of the small jiaozi wrapped in turn, and you can see the stuffing inside (only steamed). If you don't want to leave a hole, you need to rub it with the pleats gathered next to you every time. This is what I did. (Can be cooked)

9. After the small lock jiaozi dumpling skin is stuffed, knead the dough on both sides with both hands, and then hold the kneaded two sides with both hands and fold them inward. Then, take the position where symmetrical folds can be formed on both sides of the bulging middle dough, press and knead, and the finished product will be evenly divided into three parts on each side, which looks very regular and can be wrapped quickly.

1 1. Take a piece of dough from four sides of jiaozi, put it into the stuffing, fold it in half and knead the middle point, then fold an average point inward with your forefinger, and then knead the four sides respectively. This is a parallel four-sided jiaozi, first point in the middle, then rub the two sides. Take four equidistant points directly from the dough, lift them up and knead them into a regular four-sided jiaozi.

13. Fold the dumpling skin in half and knead it in the middle, and then knead it at the right and left sides. At this time, the dough is rubbed at three o'clock, leaving an extra dough on the left and right. Use your index finger to overlap the two extra wrapping papers left and right. Folding jiaozi looks like a small pocket in the back. It's cute.

14. The steps of double-fold pocket jiaozi are basically the same as those of folding pocket jiaozi. The dough is folded in half. This time, take five points to knead the dough, leaving four extra dough positions, which are folded together from the inside out to form a double pocket pleat. This jiaozi is neat and beautiful after being wrapped.

15. Straw hat jiaozi is also called Yuanbao jiaozi. First, wrap a flat jiaozi. Then, the left and right hands respectively hold the external corners on both sides of jiaozi, and rotate and knead them together in the direction of jiaozi's stomach. The side looks like a small straw hat worn by girls. Wonton is also wrapped in this way.

16. Yuanbao jiaozi This Yuanbao jiaozi must use a square dough, but the effect is more vivid ~ Take a square dough, put the stuffing away, hold it according to the square and fold it up by one third to cover the stuffing (the dough in the first picture is upside down = _ =. . ) Then turn it up by a third, rub the lower half of the face in half twice, and pull the two corners down and bend them together with both hands, just like the straw hat jiaozi.

17. Fold the dough from jiaozi and knead it in the middle. Then, the left hand and the right hand form a nest and put the dough in the palm of your hand. The right thumb and the left thumb are crossed and rubbed together in the middle. . . . Suppose the right hand is there. . . ) jiaozi in general hotels is wrapped in this way, and it is the best wrapped jiaozi, but there is no wrinkle.

18. Sunflower jiaozi Sunflower jiaozi needs two pieces of dough. If there is not enough dumpling stuffing at home, my mother usually eats it herself. For clarity, I used the upper and lower colors. After the stuffing is placed on the dough, paste the top skin, knead all the edges of the circle, and then twist the jiaozi in turn 180 degrees at the center of the circle by the method of locking the edge jiaozi, so that it looks like a blooming sunflower, which is suitable for the middle of the plate in jiaozi.

19. First, make two flat jiaozi for Yuanyang jiaozi (in order to highlight the color difference, this Yuanyang jiaozi is usually made of dough of two colors), and then arrange the two flat jiaozi in a circle. Take me for example. If the top is green and rubbed on the white, then the bottom is green and rubbed on the white, which is a bit like Tai Chi, and then all the outer edges are locked like sunflower dumplings. There is also a mandarin duck jiaozi with a leather bag, which is an open steamed dumpling. I forgot to do it. Let's shoot it later.

20. Money jiaozi Money jiaozi uses four flat jiaozi, which can be different colors or all dyed yellow. During the Spring Festival, a few dried daylily flowers are wrapped as decorations, which are more like copper coins. _ Four flat jiaozi are pressed into a circle one by one (if you want to make it into the shape of money, be careful to leave space in the middle). Then, the round edge is finished. Note: Under normal circumstances, if the wrappers of Yuanyang jiaozi and Qian Qian jiaozi are relatively small, then Xiaoping jiaozi used for splicing is also relatively small, and it will be more exquisite and beautiful to wrap.

2 1. Triangle jiaozi After putting the stuffing on the dough, take three points at equal intervals on the circumference, lift them up and knead them in the middle. There is a common pastry in the north. We call it sugar triangle, and that's what we do. Just change the dough into brown sugar as the filling in your hair.

22. Corrugated triangular dumplings Wrap a triangular dumpling according to the wrapping method of triangular dumplings, and then pinch out the corrugated folds on three sides with your thumb and forefinger in turn. Generally, this kind of steamed dumplings or crystal dumplings are used more in restaurants.

23. Double Happiness jiaozi takes four points with equal distance from the dough, lifts them and kneads them into four jiaozi, and then kneads the edges into two small nests in pairs. You can put colorful fillings in it to make exquisite steamed dumplings.

24. After putting the stuffing on the dough of Sanxi dumplings, take three equidistant points on the circumference, lift them up and pinch them in the middle, then insert your thumb and forefinger into the middle of two dough pockets that are not completely kneaded to pinch the two dough pieces together, and pinch all three dough pieces together with the adjacent dough pieces in turn (it will be more beautiful to form small flowers if there is a gap in the middle), and then steam the colorful stuffing into the pockets. The pockets formed by Sanxi jiaozi are relatively large.

25. Four Happy jiaozi. Needless to say? Comrades, the steps are exactly the same as Sanxi jiaozi. You can draw inferences from one example and make Five Blessingg, Liufu and Qifu. It's up to you, don't bother to describe it.
