"Hakka eight dishes" are actually eight delicious dishes with the most Hakka characteristics. Unlike most happy events held in hotels now, in the past, Hakkas usually held banquets in ancestral temples. Hakkas are simple neighbors. No matter whose family holds a wedding or funeral, the villagers nearby will help. Usually people clean the ancestral hall early, and the children set tables and stools together in the ancestral hall under the guidance of adults. After the formal banquet began, the strong women brought the steamed rice with rice retort, and then the younger generation began to put Hakka wine, snacks, fruits and other things on the table. At present, most banquets only say how many dishes, twelve dishes, sixteen dishes, or twenty dishes, etc. I don't know what to call them.

In the past, banquets in rural areas all had names, and banquets with various names and specifications all had various plates and bowls, which could not be wrong.

In the past, most people couldn't afford a big meal because of lack of materials. This banquet is divided into low specification, medium specification and high specification. No matter how many dishes are not up to standard, it is not a banquet. Only if it meets the specifications can it be counted as a banquet.

In the past, there were four or five seats, thirteen seats, twenty-eight seats and thirty-eight seats in the countryside with seafood, and only these numbers were counted as seats. The minimum standard for a banquet is four or five seats.

Four or five seats are four dishes and five bowls, four dishes and five bowls for drinking and eating. Don't underestimate these four dishes and five bowls. In the past, only wealthy families with upper middle peasants could afford these four dishes and five bowls in rural areas, while those below middle peasants could not afford them, while those below middle peasants accounted for the majority in rural areas. These four dishes are two cold dishes and two stir-fried dishes. Cold salad can be sliced with sausage and cold lotus root. Cooking can be done with eggs, garlic and the like. Five bowls are square striped meatball fish and a bowl of soup. This is four or five seats.

The medium size is thirteen, and the so-called thirteen means adding four plates of drinking on the basis of four or five seats, that is, drinking eight plates and eating five bowls. In the past, this kind of banquet was affordable for rich peasants and small landlords in rural areas.

Twenty-eight seats with high standard, that is, three bowls are added on the basis of thirteen, that is, eight bowls, eight bowls for drinking and eight bowls for eating. These 28 seats are very rich. In the past, only big landlords in rural areas could afford this.

The highest standard banquet is March 8 seafood. March 8 seafood includes eating and drinking a total of 24 dishes, of which there must be seafood. Before serving wine, there should be four dry and four fresh. After removing the four dried and four fresh foods, March 8 seafood was officially served. According to the elders, this kind of March 8 seafood feast has been heard of in the countryside before, and few people have eaten or seen it.

Nowadays, the rural banquet, March 8 with seafood, is definitely not new. I have eaten several times, but I can't eat this banquet without at least 800 yuan's gift money.
