The air oven circulates high-temperature air heated by the heating system in the box body through a fan to bake food. There is only one temperature, and there is no difference between surface fire and primer.
Open-hearth furnace bakes the food in the middle layer by emitting heat from two heating systems: surface fire and bottom fire, which is the most obvious difference between them.
Open-hearth oven can lock moisture reasonably, while air-hearth oven can achieve the purpose of crisp baked goods and uniform temperature up and down to the greatest extent. Air-hearth oven is particularly effective in baking crisp snacks such as egg tarts, biscuits and crisp moon cakes.
