Quanjude, a Chinese time-honored brand, was founded in 1864 (the third year of Tongzhi in Qing Dynasty), and the founder of Quanjude was Yang.

When Yang first arrived in Beijing, he bought and sold raw chickens and ducks in the meat market street outside Qianmen. Yang knows the methods of selling ducks like the back of his hand, and his business is booming. He scrimps and saves on weekdays, and his accumulated money snowballs. Every day when Yang goes to the meat market to set up a stall to sell chickens and ducks, he will pass by a dried fruit shop called "Dejuquan". Although the signboard of this store is eye-catching, its business is declining. Tongzhi for three years (1864), the business collapsed and was on the verge of bankruptcy. Smart Yang seized this opportunity, took out his savings for many years, and bought the "Dejuquan" shop.

Then, Qian Zilong, an accomplished scholar in calligraphy, was asked to write the three characters "Quanjude" and make a gold plaque to hang on the lintel.

Quanjude hired Master Sun, which is equivalent to mastering all the techniques of hanging roast duck in Qing Palace. Master Sun changed the original oven into a hanging oven. The oven has a large height and a wide hearth, and one oven can roast more than a dozen ducks. You can also roast duck facing inward. The roast duck baked by him is beautiful in appearance, fat and full, bright in color, purplish red in color, crispy in skin and tender in meat, fragrant and crisp, fat but not greasy, thin but not firewood, which has won the reputation of "delicious in Beijing, better than a duck" for Quanjude roast duck.

"Quanjude" is not only famous for roast duck at home and abroad, but also a series of fine dishes represented by whole duck seats, special dishes, innovative dishes and celebrity banquets, forming Quanjude's cuisine culture.

In the hands of chef Quanjude, the whole duck became a treasure.
