Braised tremella with Lycium barbarum

This dish is a traditional high-grade nourishing soup. According to legend, Sean, the founding father of the Western Han Dynasty, was deeply frightened when he saw Liu Bang killing a famous soldier. He is determined to retreat bravely. After resigning from his post and living in seclusion in the mountains, he often collects stewed tremella to show his innocence. Both Fang and Du Ruhui, the founders of the Tang Dynasty, were prime ministers. They think that a gentleman should not be just innocent. What's the harm of shedding his blood if he dies worthily? Therefore, medlar is added to the stewed tremella, which means that people should be innocent and not afraid of death. This dish has been passed down to this day.

Ingredients: Lycium barbarum 25g, Tremella fuciformis 150g, rock sugar 25g, sugar 50g.

Cooking method:

(1) Wash tremella, soak in warm water 1 hour, remove impurities, and soak in clear water.

(2) Add water to the soup pot and bring to a boil. Add rock sugar and white sugar to boil, then skim off the froth. After the sugar juice is clean, put the tremella and Lycium barbarum into a pot and stew until the tremella has colloid, then pour it into a big soup bowl.

Characteristics of dishes: thick soup, sweet and smooth, nourishing and fitness.

Braised crucian carp with Lycium barbarum

Ingredients: 1 crucian carp, 12g medlar, soybean oil, onion, ginger, pepper noodles, salt and monosodium glutamate.

Cooking method:

1) Wash the viscera and scales of crucian carp, shred onion and mince ginger;

(2) Heat the oil pan, fry the crucian carp until slightly burnt, add the onion, ginger, salt, pepper noodles and water, and stew for a while;

(3) Add Lycium barbarum, stew for 10 minute, and add monosodium glutamate.

Characteristics of dishes: Lycium barbarum can prevent arteriosclerosis, and crucian carp contains less fat, which is beneficial to lose weight.

Gouqi porridge

Ingredients: (4 persons) 2 tablespoons of Lycium barbarum.

Rice 1 tea bowl water 6 cups of rape 1 salt 1 teaspoon more.

Cooking method:

1. Put the rice in a deep pot, add water to boil, pay attention to prevent overflow, and cook with slow fire 1 hour.

2. Wash the rape, remove the roots, blanch it in hot water with salt, and cut it into 3-4 cm long sections.

3. If Lycium barbarum is fresh and soft, it doesn't need to be treated. If it is dry, be sure to soak it in warm water.

4. After the porridge is cooked, add salt, vegetables and medlar and cook it a little.

Fried shrimps with medlar oil

Raw materials: 500 grams of river shrimp and 30 grams of medlar.

Cooking method: Wash Lycium barbarum, add water to half, extract Lycium barbarum concentrated juice 15 ml, put the other half in a small bowl, and steam it in a cage: select shrimp, cut off its whiskers, wash and drain. Heat the wok, add vegetable oil, when it is 80% hot, add river shrimp twice, fry until the shrimp shell is crisp, take it out with a colander and drain the oil. Leave a proper amount of residual oil in the pot, add chopped green onion, Jiang Mo, white sugar, cooking wine, refined salt, monosodium glutamate, concentrated juice of Lycium barbarum and clear soup, and bring to a boil. When it is a little thick, add shrimp and cooked Lycium barbarum, turn it over a few times and add sesame oil.
