Recipe practice:
1. Remove the remaining fine hairs from the chicken skin, wash and chop.
2. Pour the chicken pieces into a large soup pot, bring them out after boiling, and wash the blood foam with warm water.
3. Put it back in a clean soup pot, add water about 20 cm higher than the chicken nuggets, and skim off the foam after the fire boils.
4. Add ginger and pepper, simmer for 2 hours, and then add medlar stew 1 hour.
There will be a lot of chicken oil in the chicken stew, so you must use a spoon to skim it out, otherwise it will be very greasy.
6. When drinking, you can season with salt and chopped green onion according to your own taste.
