Coincidentally, Qingdao is such a delicious and cool summer resort. The average summer temperature in Qingdao is 23 degrees. At the same time, as a first-tier city with mountains and seas, Qingdao is rich in products and resources, and its cuisine is the oldest Shandong cuisine, which perfectly meets the requirements.
Taiwan and Taiwan have long coveted Qingdao cuisine, which belongs to three branches of Shandong cuisine: jinan cuisine, Confucius Cuisine and Jiaodong Cuisine. The practices of five cities in Jiaodong can be subdivided into three types: Wei Yan cuisine, Qingri cuisine and Weifang cuisine.
In the long-term foreign exchange, Qingdao cuisine has further absorbed and integrated many different food cultures. Therefore, Qingdao cuisine has its own school.
In addition, Tsingtao Brewery has become a resounding business card, and draught beer packaged in plastic bags is only "limited delicious" in Qingdao, cool and sweet.
So, what are you waiting for? Taiwan Province immediately set off for Qingdao to find out what's delicious in "Oriental Switzerland".
Before leaving, Taiwan Province asked a local friend to learn the authentic Qingdao flavor from some old Qingdao, but the answers were different. After careful study, I realized that the same dish, Guangtaidong and Taixixi (two areas divided by the east and west sides of Fengtai Mountain in the old days) are different.
However, eating the sea by the sea is definitely inseparable from the word "fresh". It not only represents the freshness of ingredients, but also represents the delicious taste. Different approaches are just because of different emphases and different expressions of freshness.
0 1 | pen container barbecue
Just got off the train, hungry, but there is a predetermined goal not far from Qingdao Railway Station-"Shunxi Hotel".
This is an old shop that has been open for 27 years. According to the old diners in the store, the store moved from Shouzhang Road to Tibet Road, then to Guancheng Road, and now it has moved to Guangzhou Road. And they, on the other hand, have been chasing after food, but they are really true love.
Burning meat with a pen container is almost a must for every table. The pen tube is softer than expected, but it still tastes crunchy. For those of us who are hungry, eating is really good news.
02 | Fried pork belly
Stir-fried meat is not a very difficult dish, but it is very difficult to stir-fry until it is fragrant. Because of inexperience, it is easy to overdo it. A charred fried meat can ruin a whole pot of fried meat.
Compared with fried pork ribs and fried tenderloin that Taiwan Province and Taiwan Province often eat in Shanghai. There is a little more oil in pork belly, so the requirement for calories is actually higher. Properly cooked, you can taste the burnt flavor of lard and the crisp taste of pork.
Our dinner time is 3 pm, not dinner time, but some locals specially came to pack a pork belly, which shows the popularity of this dish.
03 | Braised prawns in oil
Braised prawns are undoubtedly the representative of Jiaodong cuisine. The prawns are bright red, the fresh shrimp meat is very fresh and sweet, and the sauce is salty and sweet. Whether it is a meal or a glass of beer, it is perfect.
We chose a shop called "Unknown Snacks". Although it is called "unknown", it is actually a famous 37-year-old shop. Braised shrimp is also the signature of this store, and both locals and tourists are full of praise.
04 | Braised yellow croaker
People in China love to eat yellow croaker, and the braised yellow croaker in Qingdao is one of the best practices.
The yellow croaker was fried until crisp, but some garlic cloves were kept at the same time. The taste is slightly sweet and salty, close to the practice of our gang in Shanghai. After the fish is fried, the thorns are tender and can be eaten together.
05 | Spicy squid
The spicy taste of Qingdao cuisine mainly plays a refreshing role, and the spicy taste is very slight. Spicy squid is actually sweet. From the outside, it looks like pot-wrapped meat or sweet and sour pork tenderloin, but it is actually a squid strip bitten open with elastic teeth.
We found another 26-year-old restaurant-"Jiulong Restaurant" for this dish. The spicy squid noodles in this shop have a slightly thick batter outside, but the taste inside is solid and elastic.
This store also left a deep impression on Taiwan Province. This is a restaurant with many fireworks. When there are many people, there is a queue of more than ten meters on the street. On the day we went, we were still full until the store closed.
The boss has long hair. When he ordered some dishes for a group of guests, he immediately turned to another group of guests. The word "say" is simple and powerful. The guest immediately reported the dishes he wanted, and the boss immediately transferred to the next batch, holding a pen in his hand and remembering the order in his heart.
06 | Clam cabbage
Clam is called "Gala" in Qingdao. In addition to the most common spicy stir-fry, Chinese cabbage stir-fry is also wonderful. Chinese cabbage retains its crisp and tender taste, while clams bring some umami flavor. This combination is surprisingly good, and it is also very suitable as a side dish.
07 | Boiled Kuntou
Boiled flounder head is a hard dish, and flounder is a flounder. It is a bit like the "crow fish" that people in Jiangsu and Zhejiang often eat, especially because they all eat fish heads, so many people will mistake it for the same kind of fish.
In fact, although the yellow croaker is also a flounder, it belongs to the flounder family, and the difference between it and the flounder family lies in the position of the eyes. Remember that "left flounder and right flounder" can be distinguished.
We chose Kaihai, and the unique head of Kaihai is one of the signs. The taste is really worthy of the signboard. The meat of the sole is full and firm, and a little fish is covered with secret sauce. It tastes salty, sweet and delicious, with endless aftertaste. We were still thinking about this dish on the way back to Shanghai.
08 | Fishing rice in sea intestines
Porphyra rice is a low-key dish. Compared with other seafood rice such as shark's fin rice, laver rice is cheap and delicious.
The crispy taste of sea sausage, with leeks and minced meat, is a clever fusion. Leek was used as seasoning in ancient China, and it is one of the "five spices", which can refresh the mind and remove the fishy smell.
Therefore, all three have actually played their respective strengths and learned from each other's strengths. You may feel "not amazing" when you eat it, but when you come to your senses, you will find that it is already a CD.
09 | Liuting pettitoes
When my wife was very young, she once tasted Liuting pig's trotters brought back by relatives, which left a deep impression at that time. "Frozen hoof" is a major feature of Liuting pig's trotters. Although the frozen hoof looks salty, it is actually only salty and sweet, and can even be described as refreshing.
Exquisite Liuting trotters must be frozen with soup stock, and the trotters made are bright, soft and not sticky. When I took the first bite, I immediately saw myself sitting on the sofa eating pig's trotters and watching movies when I was a child.
10 | Clam Chicken
In addition to spicy fried clams, it is also common for clams to be cooked with chicken in Qingdao. The taxi driver told us that the best clam chicken he had ever eaten was made by the ground chicken in Laoshan Mountain. It is delicious. Although it is much more expensive than the city, he still thinks it's worth it.
Although I didn't go to Laoshan Mountain, everyone agreed that this dish was delicious after tasting it in the city. Qingdao people really make good use of the "small freshness" of clams, which is the finishing touch in many dishes.
1 1 | seaweed jelly
All over the country, I have eaten many foods named "bean jelly", but I have always heard that seaweed bean jelly has never been eaten. In fact, the raw material of seaweed jelly is seaweed, and seaweed is also one of the raw materials for making agar.
So seaweed jelly itself has no extra taste, which is the taste you taste. Garlic paste, coriander powder, dried seaweed, etc They are all common additions, and the seasoning is mainly slightly sour. Just like bean jelly in other areas, it is a cold appetizer.
During our few days in Qingdao, the most impressive foods were mostly simple meals and snacks. It's not that dinner is not delicious, but that simple meals and snacks are excellent.
12 | ribs rice
The ribs rice is very simple, but it is really great, so great that we are willing to eat it twice during the stressful journey. The ribs and rice in Qingdao are not ribs with heavy sauce, but thin ribs with sauce soup.
Pork ribs are usually spines or ribs, which are stewed with a unique formula of sauce soup, but without losing bones. There are many thin bones in the spine, and they are all flesh and blood, which greatly satisfies the Taiwan Province people's hobby of eating bones. Eat hard, regardless of the image, just grab and chew.
Ribs are different. They are very fat and even, and have a strong meat flavor. Some shops will also remove bones and sell only costal cartilage. Elastic teeth are wrapped in soft glutinous rice and filled with oil.
Rib soup is also super suitable for bibimbap. I feel that I haven't eaten such a simple but solid taste for a long time.
We chose Wan Hechun and our friend Yuan. Wanhechun is an old shop in Qingdao. When it comes to "Paimi" in Qingdao, the first thing that comes to mind is Wanhechun, which is also one of the most crisp stews of ribs.
And that good friend is far away from our activities, but it turns out that his family didn't let us down. Pushing open the plastic curtains, I saw another kind of fireworks. There are more people in the shop than on the road, and many guests are obviously residents or regular customers around, chatting with the boss while eating.
According to Taiwan Province's personal taste, I think my friend's ribs are better than Wan Hechun's, and the soup is more delicious with a little more side dishes.
13 | Seafood jiaozi
Jiaozi, a Spanish mackerel in Qingdao, is very famous. You must eat Spanish mackerel jiaozi when you come to Qingdao. However, in order to enrich the taste, we ordered jiaozi with a family photo directly.
Different stores have different family photos. But most of them are concentrated in these kinds: sea urchin, Spanish mackerel, cuttlefish, shrimp, yellow croaker and so on.
Among them, Spanish mackerel jiaozi often puts a little leek to freshen it up. For us outsiders, the Spanish mackerel jiaozi in the hotel is delicious enough. But local people always think that the stuffing in their bags is very thick and delicious.
Taiwan Province Taiwan Province also likes sea urchin stuffing and shrimp stuffing, which are very fresh. Jiaozi, a sea urchin, can make small fried juice, and jiaozi, a shrimp, is very elastic, showing the freshness and sweetness of seafood.
The Spanish mackerel jiaozi can't escape the boat song. Jiaozi has been opened in many cities all over the country, and Taiwan Province has also eaten it in Shanghai. This time in Qingdao, I chose the oldest Minjiang Second Road store, which has just been upgraded, and I can still eat the roast duck authorized by Da Dong.
But we also know from the mouth of an old Qingdao that the taste of boat songs may not be "old Qingdao". As mentioned above, there are jiaozi in Kaihai, so you can choose it yourself.
14 | Wild wonton
Qingdao is one of the few cities where Wonton is on a par with jiaozi. In Qingdao, the ostentation and extravagance of eating wild wonton can be large or small. The origin of the word "wild" is said to be "night", because most wild wonton stalls are sold at night.
Many wild wonton stalls also sell barbecues (and vice versa), and we choose the popular "Pinghai Wonton". This is the most crowded meal we had in Qingdao. The small shop is crowded with people, teaching you what is pushing.
Jiaozi mostly eats stuffing, and wonton mostly drinks soup, but Pinghai's soup is also good, and the stuffing is better. As a Shanghainese who loves salty egg yolk, the first bite of Taiwan Province's famous egg yolk wonton shouted: "This will definitely be a fire when you drive to Shanghai!"
Every table in the store must also order a variety of microwave strings, which, as the name implies, are strings baked in a microwave oven. Rather than dry, it is wetter than charcoal fire, will not burn, and is healthier.
Microwave tendon meat is so popular that it has been sold out. You can only buy two strings of microwave chicken hearts and microwave large intestine heads. It's tender and fragrant, and the chicken heart will burst. I really want to pack 20 strings to go.
15 | squid with iron plate
Squid with iron plate is found all over the country, but it is not really well done, because the squid meat will become loose after being chilled, so the freshness of raw materials is very high.
The most famous squid in Qingdao is Sister Wang's barbecue. In the squid board, the meat is very elastic, not soft or loose at all. Squid must be fully dipped in special sauce, both sweet and salty, but girls should be careful when eating, and there will be no image when dipped in sauce.
16 | Crispy bread
On the way to Qingdao, local friends in Taiwan Province and Taiwan Province specially added Taiwan Province: "If you have the chance, try the crispy bread of Shunxing Food."
Bread? What's delicious here? Haven't Taiwan Province had enough in Shanghai? However, friends constantly recommend that many children in the community have snacks to adults. It was not until my wife bought one herself that I found it really different.
The crispy bread is covered with peanut butter, because it is full of water and it is very dense after baking. Must go with drinks! It took a long time to recover from the bite of the ignorant platform.
Now in Qingdao, besides attending the Oktoberfest, there are some unique food experiences worth trying.
17 | Seafood Market and Beer House
Of course, the beer house is the first to bear the brunt. Many coastal cities have seafood processing shops in seafood markets, which are called beer houses in Qingdao.
In the choice of seafood market, the most famous is the seafood market in Dengzhou Road. But every local we met told us not to go. A Qingdao person even bluntly said, "Don't go to Dengzhou Road. You'd rather go to Yingkou Road. Yingkou Road may be slaughtered, but at least Yingkou Road locals will go. "
We were a little in distress situation, but we finally decided to go to Yingkou Road Seafood Market. Yingkou Road Seafood Market has been specially decorated as tang style, but the customer cheating we were worried about did not happen, and the market also posted a notice prohibiting customers from cheating.
Of course, just in case, we also got a way from the local people in advance that must not be slaughtered: buy it from aunts and uncles. When an aunt and grandmother bought it, they boldly went over and asked the stall owner the price. The stall owner never dared to kill you, because you quoted a high price, and the aunt next to you immediately accused the stall owner of cheating.
Soliciting is not allowed in the market, but there will still be "gentle soliciting", that is, always accompanying you and giving you advice when you buy seafood. This is inevitable in many places. Generally speaking, Yingkou Road seafood market is good, without excessive stalking. Everyone decides whether to accept or not according to their own needs.
We went to Tuandao Farmers Market again. Tuandao is much bigger than Yingkou Road, and it is rich in all kinds of ingredients. You can also buy a unique snack in Qingdao-fat residue.
Although the fat residue looks oily, in fact, like oily meat, some oil has been removed. Those who are afraid of oil can buy thin ones and have a taste.
The taxi driver told us that the most important thing for the seafood market and the surrounding beer houses is to ask about the unit price. Some unscrupulous merchants quoted prices without units. You thought it was 20, but they charged you 20.
Avoid this price trap, in fact, beer houses all taste the same. So we chose a beer house at random. In fact, the beer house does not earn much by processing fees, mainly by wine. The boss is very honest. Even if we don't order wine, he is still very kind and the food is delicious.
My wife has been to seafood markets in many places, and the processing shops near the markets often use simple cooking techniques to highlight the original flavor of fresh seafood. At this point, seafood processing rooms all over the country and the world have reached a tacit understanding.
18 | Tsingtao Brewery Museum and Official Store
Many Qingdao locals have recommended the Beer Museum to us. Museums really attract quiet Taiwan Province more than Oktoberfest.
The museum can learn about the history of Tsingtao beer and see the whole process of beer production. For friends who love drinking, the most important thing is to get a free draft beer.
There is also an official restaurant in the museum, where you can taste various derivative foods of beer, such as beer ice cream and hops coffee, which is also very interesting.
In addition, Tsingtao Brewery also has an official store in our city, named "Qingdao 1903". There is a platform of "eat shrimp first, then eat skin" in the shop. Just like the name of this dish, the shrimp skin is fried very crisp, even crisper than potato chips.
On the other hand, many tables will order "one plus one", which means five different beer platters. My favorite is white beer, which is refreshing but can taste the malt aroma in beer, as well as a touch of citrus flavor.
At the same time, this store is also a good place to experience Qingdao nightlife. There are singing bands, and each table has one or two snacks. The closest to the stage are old customers, and the interaction with the live band often drives the atmosphere of the whole bar.
Qingdao is really a wonderful place, and there are few places where Taiwan Province can be filled with goodwill immediately after a half-day walk. Quite simply, many dishes don't care about setting the plate, and they don't have rich colors. It is very comfortable, with pleasant climate and beautiful scenery. Every local people call it the city of old age.
But at the same time, it is very high-end, and the magnetic levitation with a speed of 600km/h has just rolled off the assembly line, representing the most advanced technology in the world. Very kind, every local who talked with us deeply is very rational and friendly.
It's worth experiencing for yourself.
Perhaps you, as a reader, also found that we didn't wander around the seaside. Like all seaside resorts, if you want to find authentic food in Qingdao, you need to push 3-5 kilometers from the coastline, or simply put, collect our Qingdao food guide.
Small egg
On the left are ordinary buns, and on the right are big buns from Qingdao. I haven't had breakfast for two days. ...
