Ingredients: silver carp head, chili sauce, onion, garlic, ginger, coriander, salt, vinegar, pepper, aniseed
Method:
1. Wash the silver carp head and cut it from the middle along the lower lip and belly of the fish.
2. Wash the onions, ginger and garlic and mince them. Wash and cut coriander into sections.
3. Heat the oil in a pan, sauté the peppercorns and aniseed until fragrant, then add the chili sauce and stir-fry for about 1 minute. Pour in the onion, ginger and garlic and stir-fry.
4. Then put the fish head into the pot and add boiling water until the fish head is covered. Add appropriate amount of soy sauce, vinegar and salt to taste. Bring the pot to a boil over high heat, then turn to medium heat and simmer for about 40 minutes.
5. Remove from the pan and serve on a plate, sprinkle with diced coriander.
