Step 7: Add corn starch and stir until there is no dry powder. Adding corn starch can make the fish sauce more sticky.
Step 8: Add an egg white and stir well. No egg yolk. If you do this, the fish balls won't bounce, so don't add egg yolk.
Step 9: When the water in the pot is cold and your hands don't feel too hot, you can start squeezing fish balls. Grab a proper amount of fish paste with your left hand, squeeze it out of the tiger's mouth, scrape the fish balls into hot water with a spoon, and scald the spoon with hot water after scraping one fish ball at a time, so as not to stick to the spoon. You can't make fish balls with hot water, because the water will disperse if it is too hot.
Step 10: After all the fish balls are squeezed out, bring them to a boil, take them out and soak them in cold water 10 minute. After cooling, it can be frozen in the refrigerator. Just take it out and thaw it when you want to eat it.
