Chop pepper, onion and garlic for later use.

Marinate the eggplant with salt for 3~5 minutes, and then wring the water out of the eggplant by hand. Pickled eggplant will not eat so much oil when fried, just use the same oil as usual. Is this much healthier?

Put a proper amount of oil in the pot, pour in chopped green onion and stir-fry until fragrant.

Then add marinated eggplant, stir-fry for a while, then add red pepper and green pepper, then add a teaspoon of white sugar, not much, and then add 2 teaspoons of soy sauce, which is soy sauce. Then stir-fry until the green pepper, red pepper and eggplant all have children. Finally, add minced garlic before cooking.
