Ingredients: 300g flour, 150ml cold boiled water, salt, pepper, oyster sauce, eggs and onions.
Production method:
First, we put the prepared flour into a clean and waterless basin, then add a spoonful of salt and mix well. Don't forget this step here, because salt plays a key role in making tough noodles, and then pour the prepared cold boiled water into the basin, preferably while stirring with chopsticks until the flour is flocculent, which can control the water quantity well and prevent the flour from being too thin.
Then knead the prepared flour into dough by hand until the dough surface is smooth, which means that the dough has been kneaded. Then put the kneaded dough on the chopping board, and cover the glass bowl on the dough for proofing. After about 30 minutes, take out the dough and rub the air inside with your hands, so that the noodles will taste more delicate. After kneading the dough, knead it into long strips and cut it into pieces.
Then put the cut dough into a bowl, pour in cold water, soak for about 15 minutes, then pull both ends of the dough with your thumbs and gently pull it, so that the dough will instantly become noodles, then put the pulled noodles into a pot, stew them in boiling water, and cook for about 2 minutes, then add a proper amount of salt, pepper, oyster sauce and eggs, and sprinkle with a little onion.
