Materials and methods of crystal shrimp dumplings;
Ingredients: 500g of shrimp, 50g of starch, 50g of dry powder150g, 5g of chicken essence, 5g of sugar15g, 5ml of sesame oil, 3g of raw flour, 50ml of water150ml, 50g of bamboo shoots and a proper amount of carrot slices.
Recipe practice:
1. Cut off the head of the fresh shrimp, peel off the shell of the shrimp, then pick off the shrimp line with a toothpick in the penultimate section of the shrimp, and then cut the shrimp into particles;
2. Cut bamboo shoots into small dices;
3. Cut the fat pork into cubes;
4. Put the shrimp, pork, bamboo shoots, salt, chicken essence, sugar, sesame oil and corn starch into a bowl and mix well. Then marinate for 20 minutes;
5. Beat the marinated stuffing on the chopping board several times until the shrimp becomes sticky and energetic. Ok, the stuffing is ready and put aside for use;
6. After mixing the flour and starch, pour it in with boiling water for several times, constantly stirring and kneading during the period, and finally knead all the flour into a complete dough;
7. Good dough should be wrapped with plastic wrap and stored at high temperature. Otherwise, once cooled, the crust will be more easily broken, and the shrimp dumpling skin will not be made.
8. Take about 10g of dough at a time, put it on an oiled or dusted non-stick pan, and press it into a circle with an oiled knife. Then grab the handle, press the knife body with one hand, press the knife on a small dose and turn it once.
9. Blow the dumpling skin with a knife and put it on the circle set up by the thumb and forefinger;
10. Shrimp stuffing should be placed in the middle of the dumpling skin, and don't put too much stuffing, because the dumpling skin is not very malleable and easy to break. Then knead the dumpling skin into your favorite shape according to your personal preference;
