Eggs, fried tomatoes
Ingredients: 4 eggs, 3 tomatoes, 50ml of salad oil, onion 1 piece, 3g of salt, water 10g, half a spoonful of sugar and half a spoonful of soy sauce.
Practice steps:
1. After washing the tomatoes, make a cross at the top, put them in a basin, and soak them in boiling water.
2. After soaking the tomatoes for a while, take them out, peel them and cut them into small pieces for later use.
3. Wash the onion and cut it into chopped green onion for later use;
4. Pour the eggs and half a teaspoon of salt into a bowl, break them, add water and stir well;
5. Heat the wok and pour the salad oil.
6. When the oil temperature is 50% to 60% hot, pour in the egg liquid, turn it over and fry it until it is brown, and then serve it;
7. Start the oil pan again, add tomatoes and stir fry to get juice, then drop a little water and add sugar;
8. After stir-frying, add soy sauce to deodorize, add salt to taste, and finally pour the fried eggs into the fire and stir well. Then put it on a plate and sprinkle with chopped green onion.
Tips:
1, it is best to choose more mature tomatoes with sufficient water and sweet taste;
2. Add a little water to the egg liquid, stir it thoroughly, and stir the omelet evenly, which will be soft and tender;
