There are many varieties of Huaiyang cuisine, such as stewed lion's head, flat bridge tofu, soft-pocketed long fish and so on. Among them, my favorite food is braised lion head, which is really charming. Braised lion's head looks like a big meat ball, red, white and yellow. The red one smells like tulips, the white one smells like Sophora japonica and the yellow one smells like osmanthus. Eating braised lion's head is easy to be crushed by chopsticks, and experienced people will eat it with a spoon. Soft-skinned long fish is also good. It's dark when served, and it's slippery in your mouth. The poet Ding Mang praised it as "a long fish with soft bones and fresh meat".
Huai 'an snacks are also good, including soup packets, steamed buns, pot stickers and so on. I like eating steamed bread best. The little red envelope looks like a football, chews like cotton and is soft. It's really beautiful. The soup bag is also good, the skin is as thin as paper, and the soup is delicious. Mr. Zhu Ziqing said in the article "Talking about Yangzhou": "Beiping South Huaiyang Restaurant sells dumplings well."
Huaiyang cuisine in my hometown is really beautiful.
