How to make yam slices?

Preparation of ingredients: appropriate amount of laver and shrimp skin powder, yam 1, and appropriate amount of corn starch.

PS: You can choose a slightly thicker yam to make this time, and the finished product will be better! The laver and shrimp skin powder used here was made by me before. Click here to view the method.

Put corn starch into a bowl, add appropriate amount of water, and stir well for later use.

Peel the yam and scrape it into thin slices with a scraper.

PS: Because Chinese yam slices need to be sliced thinner when baking, I also tried many methods when peeling Chinese yam slices. One way is to scrape a long strip from the side, and the other way is to scrape only one cross section as I did in the cartoon. Generally speaking, this method is relatively simple, and it can be controlled by scraping the yam slices as thin as possible.

The specific operation method can be as follows: you can hold the lower part of the peeled yam in your hand like me and scrape it off one by one with a paring knife according to the circular section, as shown in the figure. Be sure not to scratch your hand!

This is the sliced yam.

Soak yam slices in water starch immediately.

PS: Have you noticed that sometimes when making yam, it is easy to turn black, which is mostly caused by oxidation. I put the yam slices directly into water starch to prevent the yam slices from oxidation.

Blanch the soaked yam slices in boiling water to make them easier to cook later.

PS: The yam slices baked in this way will not be hard and taste better.

Put the blanched yam slices in clear water to calm them down.

Spread baking paper on the baking tray and arrange the yam slices in turn.

PS: It's best to use kitchen paper to absorb moisture. It's more brittle when baking.

First, put the yam slices into a preheated oven and bake at 150 for 5 minutes.

PS: Be sure to wait until the oven is preheated before putting the yam in. Let the oven slowly dry the moisture on the yam slices.

After the water on the yam slices is almost dry, take out the baking tray and brush a little vegetable oil on the yam slices.

PS: Brushing a thin layer of vegetable oil in this way can play an anti-sticking role and make the yam slices more fragrant.

At this time, you can find that the yam slices have dried and become slightly hard.

Turn the yam slices over slowly.

Continue to bake the yam in the oven at 150 for 5 minutes until the yam slices become crisp.

PS: Because everyone's temper in the oven is different and the ambient temperature is different, the temperature and time of the second baking must be adjusted according to your actual situation, so as to ensure slow baking at low temperature and let the yam slices be thoroughly baked!

In addition, if you think the yam slices are not crisp, one reason may be that the yam slices are not thin enough, or they are not fully baked. You can keep baking for a while!

Finally, sprinkle seaweed and shrimp skin powder on the baked yam slices to taste.

If the baby wants to steal your potato chips, you can take this snack out. Unexpectedly, it tastes as delicious as potato chips.

skill

Yam slices must be cut very thin to have a crisp feeling. The prepared yam slices are more suitable for babies with better chewing ability. When handling yam, you must protect yourself. You can soak your hand in vinegar for a while, and then put on gloves. You won't be ticklish if you get yam mucus!
