I remember the first time I ate bad peppers was when I went back to my hometown in Guizhou with my husband. I didn't inform my family because I came home late that day. I was hungry when I got home because I didn't have dinner. Fortunately, there are some cold meals left at home. My husband fried a simple fried rice with bad peppers and eggs. I thought it tasted strange when I served it. Do you want to add red pepper to the fried rice with eggs? You know, we usually don't put Chili in fried rice with eggs, just add chopped green onion when we cook. This kind of fried rice with eggs is the first time to eat, but we will eat it when we are hungry, what's more, it looks good. Once eaten badly, I fell in love with rotten peppers.
Every year after marriage, Guizhou's mother-in-law always cooks some for us to take home to eat, but as time goes by, the old people get older and older, so we begin to learn how to cook bad peppers at home. When we started cooking, we found that it was actually very easy to cook bad peppers, so our family always cooked some every summer. Ingredients: red pepper, salt, rock sugar, liquor, ginger and garlic;

1, choose fresh red pepper, if you want to be spicy, you can use Erjing red pepper, clean it and dry it;
2. Prepare garlic, clean the tender ginger and cut the ginger into small pieces or break it;
3. Cut the red pepper and garlic into pieces with a cooking machine, which used to be chopped by hand. However, since I bought this cooking machine at home, it is very convenient to break it directly with the cooking machine several times, saving time and effort. In order to make it simpler, salt is also put in the cooking machine to facilitate mixing.
It is convenient to have a cooking machine at home. Usually it takes a few minutes to chop a piece of meat and vegetables, which saves a lot of time than chopping by hand!
4. Add ginger, rock sugar and white wine to the stirred chopped pepper. It is best to use high-alcohol liquor, stir well and marinate for 30 minutes.
5. The sealed glass jar can be eaten basically in 7 days.
In the past, the older generation liked to use an old jar with a jar mouth to make rotten peppers, at least two jars at a time. Now, for convenience, we use a glass-sealed jar, so that it is not too much at a time. It is relatively convenient to clean the jar after eating. As long as it is oil-free and water-free, it is easy to succeed.
Generally 10 kg of pepper needs 500g of salt, half a catty of liquor, 200g of rock sugar, about 400g of ginger and 500g of garlic. The amount of rock sugar, ginger and garlic can also be increased or decreased according to your own taste. Bad pepper is used to improve the taste and umami when cooking fish or frying meat, especially when adding bad pepper to vegetables in summer, which is a very seasoning mouth for people who like to eat pepper with bad taste.
