Every family will put the best food on the table every New Year, such as pork, beef, chicken, fish and so on. In the past, everyone would grab meat to eat during the Chinese New Year, but now life is better and people generally eat well. Naturally, it's not so rare. I'm tired of eating a few mouthfuls, but vegetarian dishes are already very popular. Therefore, if you want to cook a good table, you can't do without a few delicious vegetarian dishes. First course: cold rice noodles
Prepare two pieces of bean curd skin, wash it, roll it up and cut it into filaments, then prepare several side dishes, half red pepper, half green pepper, a little parsley, and green pepper, wash it and shred it.
Add water to the pot. After boiling, pour the bean curd skin into the pot and blanch it. When it almost boils again, you can take it out. Don't put it on the plate after taking it out, or it will stick together easily. Instead, put it in a cold water bowl. It is best to change the water twice. Get the water out.
Green and red peppers can also be cooked in the pot for a while, not too long. Put them in a bigger pot with tofu skin. Remember that tofu skin must be drained, otherwise it will be difficult to season later.
Start seasoning, add shredded onion, salt, chicken essence, sugar, Chili oil and sesame oil, and stir well. It is not recommended to put colored ingredients such as cigarettes and vinegar in this dish, so it tastes better when seasoned.
Stir well to make the tofu skin fully tasty, then add a little coriander and stir for a few times to serve. If you like spicy food, it can be served with a little millet pepper, which is also delicious.
A refreshing cold rice noodle was served on the table. Although it is common, it will definitely be popular after serving, especially those who love to drink.
The second course: cold and spicy peanuts.
Prepare some peanuts, soak them in cold water for two hours in advance, soak them fully before cooking, and then take them out and rinse them off. Wash a few fragrant leaves, a star anise, a few dried peppers, a piece of cinnamon and a handful of pepper in a bowl, then pour them into a pot and boil them in water for five minutes.
When the time is up, pour the peanuts into the pot and continue to cook. Add salt to taste after boiling, slightly salty. After adjustment, simmer with low heat.
After boiling for 20 minutes, turn off the fire and let the peanuts soak for 10 minute. This will make them taste better. Then prepare some side dishes, diced celery stalks, peeled and diced carrots, blanch them in a pot, take a bath and pour them into a big bowl.
The peanuts are fished out and put together with celery and carrots to start seasoning.
Add salt, chicken essence and sesame oil and stir well. This cold-mixed spiced peanut is ready and put on the plate.
The third way: cold lotus root slices
Prepare a short section of lotus root, the slender head is the best, so it tastes more crisp and tender. Peel, wash and slice, rinse off the starch with water, and soak in clear water for a few minutes.
Add water to the pot, bring it to a boil, pour in a tablespoon of white vinegar, remove the lotus root, pour it into the pot, and simmer for a minute or two.
Immediately after taking it out, cool it, rinse it with cold water, and pour it into a large bowl after controlling the water.
Mix a bowl of juice, add minced garlic, millet pepper and chopped green onion into the bowl, and pour hot oil into the bowl to stimulate the fragrance. If there is Chili oil, put Chili oil directly. If not, add a spoonful of Chili noodles before pouring the oil.
Then pour in soy sauce, balsamic vinegar, sugar and salt and stir well. Just have a good taste. If you like white lotus root slices, don't add soy sauce, and use white vinegar or white rice vinegar instead of balsamic vinegar.
After mixing the juice, pour in lotus root slices, add a little coriander, mix well and serve. Hot and sour and delicious, but you can't eat spicy food without Chili.
Number four: spinach fans peanuts cold.
Prepare a handful of spinach, two vermicelli and a little peanut. Pick the spinach and clean it. Soak vermicelli in cold water. Stir-fry peanuts in a pan and let them cool.
Add a small amount of water to the pot, put the vermicelli in after boiling, take it out immediately after cooking until it is delicious and edible, and then soak it in cold water for a while. In order to taste good, change the water twice to cool down and control the water after processing.
The water in the pot continues to be heated. After boiling, pour the spinach into the pot and add a little cooking oil to blanch it. Take it out after boiling, cool it again, and squeeze out the water by hand. Never eat cold salad wet, because it tastes bad.
Put the spinach in a big bowl, cut the vermicelli to avoid being too long, cut it and put it in the bowl, then add the fried peanuts.
Minced garlic, Jiang Mo and millet pepper, put oil in the pot and heat it. Put these three ingredients into the oil pan to smell, turn off the heat and pour them into the bowl, and stir them evenly with chopsticks.
Then add salt, soy sauce, balsamic vinegar, sesame oil, Chili oil, white sugar and chicken essence, and stir well. This dish is ready, looks good and tastes delicious.
