1. Wash and filter the fish for later use.
2. Replace the fish body with a flower knife and marinate it with a little salt.
3. Chop green pepper, ginger and garlic, and onion.
4. Put oil in the pan and fry the fish until golden on both sides.
5. Push the fish aside, add minced ginger, garlic and minced green pepper, stir-fry until fragrant, and add two spoonfuls of cooking wine and one spoonful of water to soak both sides of the fish.
