Braised chicken feet

500g chicken feet, 3 slices of ginger, 2 shallots, 1 spoon of cooking wine and sesame oil (15ml), 1 spoon of salt and Jiang Mo (5g), 1 spoon of chopped green onion and chicken essence (5g) and 2g of white pepper.
working methods
Remove the nails from chicken feet bought in the market, clean them with tap water, and blanch them in boiling water for 2 minutes to remove the odor.
Add 800ml cold water to the pot, add the processed chicken feet, old ginger slices, onion slices and cooking wine, bring to a boil over high fire, simmer for 30 minutes, add salt, and continue stewing for 10 minute until the chicken feet are crisp and rotten.
Add sesame oil to the wok, heat it to 60%, add chopped green onion and Jiang Mo until fragrant, pour 300ml of stewed chicken feet, add chicken essence and white pepper, cook until the marinade, then add chicken feet into the marinade, turn off the fire, and take them out after natural cooling.

When choosing chicken feet, you should choose fat and fleshy chicken feet. Chicken feet can't be stewed with fire, otherwise the skin of feet will be easily broken.
