How to prepare braised pork:
One pound of front leg meat or pork belly
One spoonful of oil, one spoonful of rock sugar, and three tablespoons of wine.
< p>About three taels of green onions, four tablespoons of soy sauce, one and a half cups of water, and two star anise.Method: Wash the meat, drain it, and cut it into small pieces about one inch in size.
Add a spoonful of oil, put the green onions at the bottom of the pot, put the meat on top, add soy sauce, water and three tablespoons of wine. Add rock sugar and star anise, cover the pot and bring to a boil over high heat, then reduce to low heat and simmer for about two hours. Pick up the pot and shake it to prevent it from sticking to the bottom of the pot. When the meat is cooked, if there is too much soup, turn on high heat and reduce the sauce to half a cup until it is thick and shiny. Test the taste. Dish out the meat. This is a family practice.
