Exercise 1
Ingredients: low-gluten flour 120g, egg liquid 40g, butter 50g, fine sugar 20g, bean paste stuffing 200g, black sesame (white sesame is also acceptable).
1, first soften the butter at room temperature, and press out the groove by hand. Then beat the butter with an egg beater, add fine sugar, and continue to beat until the color turns white. Then add the egg liquid twice, and beat until it is completely blended. Finally, sieve in the low-gluten flour, stir well and knead into dough.
2. Divide the kneaded dough into two parts, and roll one part of the dough into strips with a rolling pin, as shown in the figure. Take half of the bean paste stuffing, knead it into strips, put it in the middle of the cake, roll it up from one side and knead it several times.
3. Cut the rolled dough into small pieces with a knife, put them on a baking tray, brush them with egg liquid and sprinkle with black sesame seeds.
4. Preheat the oven up and down 175 degrees. After preheating, bake in the oven for 25 minutes. Both sides are gold. The temperature of the oven is slightly lower, especially in the last few minutes. You can observe through the glass panel of the oven to avoid being burned.
Exercise 2
Main dough materials: flour 250g, warm water 160g.
Crispy material: flour 25g, oil 50g, onion 15g, ginger slices, spice powder, spice 1 package, pepper.
Ingredients: leek, salt.
Exercise:
1) Knead the flour in the main dough with warm water until it is smooth (the dough is as soft as possible).
2) Cover with a damp cloth and wake up for 20 minutes.
3) Cooking cakes while waking up: Put the spice powder such as onion and ginger into an oil pan and turn on a small fire, stir-fry until the spice powder is brown and the fragrance penetrates into the oil.
4) Remove all seasonings from the oil, cool slightly, and pour the oil into 25g flour to make it crisp. Meanwhile, prepare chopped green onion.
5) Divide the dough into three parts. Take a portion of dough and roll it into large pieces.
6) Brush a layer of pastry on the dough surface and sprinkle with appropriate amount of salt and chopped green onion.
7) Fold the dough like a folding fan, wide or narrow, not too neat.
8) 5 minutes after waking up, roll up from the right hand end, stretch the noodles with your left hand while rolling, and make as many laps as possible.
9) After rolling, press the end under the dough, flatten it and set it aside 15-20 minutes. At this time, you can continue to make the next dough.
10) Roll the awakened dough blank into a big circle.
