2. Wash and cut the black-bone chicken into pieces, cut the ginger into pieces, put it in a pot with cold water, and cook the ginger and black-bone chicken together! Then pour out the water, in order to get rid of the bloody and fishy smell of black-bone chicken. Don't cook for too long, just open it and pour out the blood!
3. Clip the shredded ginger from the black-bone chicken! Pour the soaked red dates, Lycium barbarum, Codonopsis pilosula, Radix Astragali, Radix Angelicae Sinensis and the soaked water into the pot.
4. Cover the lid and cook for 20 minutes. When the time is up, open the lid and season with salt and chicken essence!
