Method: 1. Wash the screws after buying them, control the moisture, then put the screws into a pot, add an appropriate amount of water, add ginger slices, bay leaves, cinnamon and cooking wine, bring to a boil, then cook over high heat 10 minutes. Worried about the screws being dirty and containing parasites, I boil them in boiling water for a few minutes each time. Add some spices and cooking wine to remove the fishy smell.
2. Put an appropriate amount of oil in the pot. When the oil is hot, add peppercorns, Sichuan peppercorns, star anise, ginger slices, and dried red pepper and stir-fry until fragrant. I usually put more red pepper. Personally, I think spicy food tastes better than non-spicy food. This depends on personal taste, increase or decrease the pepper as appropriate. 3. Pour in the screws and stir-fry. It is best to buy screws with the tails cut off. These screws are not only clean, but also easy to eat without getting sand. 4. Add a tablespoon of sweet noodle sauce and stir-fry quickly, then add oyster sauce to enhance the flavor. I use the same spoon that everyone in the family uses for soup. 5. Add garlic slices, cumin powder and a little salt to enhance the flavor before serving. Personally, I feel that garlic slices are indispensable and must be added. At the end of the meal, I found that even the garlic slices are so delicious that I can’t let go. It’s best to add some cumin powder, it will be delicious.
