Lijiang hot pot with ribs is one of the traditional delicacies in Lijiang, Yunnan. Many people don't know the origin of this dish. It is a main course in the third stack of Naxi famous dish "Three Stacks of Water"-"Warm Stack". Three stacks of water are equivalent to the Manchu-Han banquet of Naxi people, and only the most distinguished guests are served this dish. According to legend, when Xu Xiake traveled to Lijiang, Naxi Tusi used 108 "Three Layers of Water" to entertain him.
Lijiang hot pot of preserved ribs is made of ribs marinated by local methods, stewed in casserole, and usually served with fresh vegetables: mint, leek root, tomato, celery, potato, wild mushroom, arrowroot, vermicelli and so on. Seasoned with local unique dipping water, it is delicious and rich, and the meat is fresh, but the more it is cooked, the more fragrant it is. With local rice wine, the taste is self-evident. It is a good food in Yunnan.
