How to make fried hairtail:
Ingredients: 500 grams of hairtail.
Seasoning: 60g peanut oil, 15g green onions, 8g ginger, 1g pepper, 3g salt, 25g soy sauce, 20g cooking wine, 2g MSG, 35g salt and pepper.
Steps:
1. Gently wash the hairtail with warm water to clean the surface dirt, and cut off the head and thin tail;
2. Remove the internal organs by caesarean section , wash it and put it on the chopping board, cut it into 5 cm long sections with a knife, and put it in a bowl;
3. Add chopped green onion, minced ginger, pepper, salt, cooking wine and soy sauce to the bowl. Mix well and marinate to taste;
4. Put the pot on the fire, add peanut oil and heat it until it is more than 80% boiling. Add the fish segments, flip them with a spoon and fry them for half a minute to 1 minute. As soon as you see the fish segments turn yellow and rise to the surface of the oil, you can use a slotted spoon to pick them up;
5. When the oil temperature in the pot rises to boiling hot again, return the fish segments to the pot and fry them. When the outer skin is fried until crispy, take it out, remove the remaining oil, and serve on a plate. Dip it in pepper and salt when eating
