These four famous wines respectively represent four major flavor types: these four famous wines respectively represent four major flavor types:
Maotai-Maotai or Maoxiang (other typical representatives: Langjiu)
Fenjiu-Fenxiang or Fenxiang (other typical representatives: Yellow Crane Tower and Erguotou)
LU ZHOU LAO JIAO CO.,LTD-Luzhou-flavor (other typical representatives: Wuliangye, Sujiu's three ditches and one river)
Xifeng liquor-Fengxiang type (strong flavor of ethyl acetate)
The four famous wines, which were selected from more than 100 kinds of liquors led by the state in those years, have gained a good reputation after many years of public tea tasting, and can basically be regarded as the "best liquor" asked by the subject.
Let's talk about my personal views.
We usually drink white wine, and we are more likely to have dinner with family and friends than business negotiations or other scenes. Then my personal evaluation criteria for liquor mainly focus on four points, which you can refer to: whether the aroma after opening the bottle is rich, whether the taste at the entrance is mellow or clear, the difficulty of swallowing and whether it is smooth, and the degree of the head after drinking.
The above four indicators determine which liquor can be called "good wine" for me.
Comment on the four famous wines from a personal point of view (mostly personal views+hearsay, corrected by professionals)-
Maotai:
In a word, it is a model of maotai flavor. From my personal understanding, it should be regarded as the wine commonly used in the army, while moutai prince is only occasionally used for family dinners even when drinking Maotai. Personally, I don't drink Maotai many times, and "the fragrance at the bottom of the cup" is my main impression. The so-called "hanging cup" phenomenon of Maotai-flavor wine is very obvious, and it will have a "heavy" impression visually. After the entrance, Maotai mainly reflects its "sauce flavor" and "cellar flavor", and a large part of its contribution comes from the distiller's yeast made by wheat (many fake Maotai are sorghum wine [Note: the expression here is wrong, according to
Uncle Biao
Correct me, maotai is just wheat koji, and it is still maotai on the whole. It tastes sweet but not heavy enough, and the degree of hanging cups is weak. In addition, if you can taste the protoplasm of Maotai, I sincerely recommend you to taste it. By the way, Langjiu and Maotai not only have the same flavor, but also have little difference in taste. As along Chishui River, Langjiu and Maotai are similar in brewing water (Langjiu seems to be brewed with mountain spring water), and the technology is similar. Therefore, if you have a soft spot for maotai flavor, but feel that drinking maotai is a bit extravagant, Langjiu is a very good choice.
Fenjiu:
Fen-flavor liquor has a typical sense of clarity-if it is not a heavy drink, it will reverberate between the throat and the palate if you swallow it gently. The mouth irritation of Fen-flavor liquor is relatively weak, but it has a sweet taste, but personally, the irritation after swallowing is relatively high. There are many stories between Fenjiu and Maotai, and later there are many controversies. I feel that Fenjiu or most Fen-flavor liquor tastes like a hometown, which may be related to the fact that relatives and friends like to drink Fen-flavor liquor when having dinner.
LU ZHOU LAO JIAO CO.,LTD:
Several kinds of wines in LU ZHOU LAO JIAO CO.,LTD (Guojiao 1573, Tequ, Touqu, etc.) are my favorites. Corresponding to the name of the aroma type, it is the strong aroma of LU ZHOU LAO JIAO CO.,LTD, which is sweet in the mouth. Although it is not as thick as Maotai and not as cool as Fenjiu, it is smooth and long, with endless aftertaste.
It is worth mentioning that Luzhou Laojiao Tequ was rated as one of the four famous wines, and Guojiao 1573 was a new category gradually developed later. It is said that, regardless of the difference between the two types of wine cellars and the base wine, the raw material of Guojiao 1573 is just a spice of Bitqu. From my taste, there is really little difference between Guojiao 1573 and Tequ. It can be said that Tequ is more cost-effective.
(I'd like to add here that most of the white wine we usually drink is not real puree wine, but blended wine. The spice mentioned here is the substance added by the bartender according to a certain proportion after the puree wine is produced. Du Niang Baidu Encyclopedia: Protoplasm wine, as its name implies, is the original wine distilled by fermentation without any blending (blending) process, also called base wine. Real good wines are often produced by blending. Since ancient times, bartenders have played an extremely important role in liquor production and brand building. For most people who like to drink, the original pulp wine lacks a taste because it has not been blended by the bartender, which is hard for consumers to like. )
Xifeng liquor:
Fengxiang, similar to Luzhou-flavor, but richer in flavor, and slightly smells a little different (the taste of ethyl acetate). Xifeng liquor is still a bit strong, bitter, spicy and sweet; Although the aroma has a long aftertaste, the taste on the tip of the tongue remains less. To some extent, this makes it easy for some people to "not get enough" by drinking xifeng liquor-the more they drink, the more fragrant they feel, and the more they want to drink. The wine produced in Shaanxi can really be called "fine wine", and because of its extraordinary fragrance, I feel that xifeng liquor may have been influenced by the brewing techniques in the western regions.
Looking at the four famous wines, it can be said that they can all be regarded as "the best liquor to drink", among which my personal favorite is Luzhou Laojiao Tequ.
Personally, friends and relatives can try Luzhou Laojiao special song or Touqu and Fenjiu blue and white porcelain for dinner, which has both taste and cultural value, and the price is moderate.
