Method 4: Blanch in water
Cut the bitter melon open, remove the seeds, and cut it into strips, then rinse it with cold water, pinch it gently with your hands while washing, and replace it after washing for a while. Rinse with water again, and rinse repeatedly three or four times, and the bitter juice will be lost with the water. After being fried in this way, the bitter melon tastes delicious, slightly bitter but sweet.
Method 5: Stir-fry
Stir-fry bitter melon and pepper together to reduce the bitterness.
Wash and cut the bitter melon into shreds. Heat the wok without adding oil. When the pan is hot, pour the shredded bitter melon (you can also add a little kidney beans) into the pan and stir-fry. If it is too dry, add a little water. Fry until cooked and set aside. If you are frying bitter gourd, stir-fry the shredded bitter gourd, mix well, add seasonings and serve. Add a small amount of sugar. If you like spicy food, you can fry the peppers before frying.
Method 6: High temperature
Blanch the bitter melon slices in boiling water before use.
The bitter taste of bitter melon mainly comes from momordin (known as "high-energy clearing lipid") and momordrin. After being exposed to high temperatures above 80°C, these two substances have been destroyed. After being rinsed with cold water, the bitter melon The bitter taste is gone, and all the heat-labile nutrients are gone. Therefore, it is not recommended to use high temperature method to treat bitter melon.
