Taro Chicken

Ingredients: One roast chicken, one taro, half a green onion, 4 large slices of ginger, 5 cloves of garlic, 3 peppers, 2 star anise, 1 tablespoon of olive oil , 1 tablespoon dark soy sauce, 2 tablespoons cooking wine, 1 teaspoon salt, and rock sugar according to personal taste.

Method:

1. Cut the roasted chicken into pieces

2. Make a pot of boiling water, add the chicken pieces, take them out and set aside.

3. Pour olive oil into the pot, add scallions, ginger slices, loose garlic cloves, star anise and chili, and stir-fry until fragrant.

4. Add the blanched chicken pieces and stir-fry for two to three minutes.

5. Pour in dark soy sauce for color and seasoning.

6. Pour in the cooking wine.

7. Pour boiling water over the chicken pieces, cover the pot and simmer over medium-low heat for half an hour.

8. When the soup is halfway through, add two pieces of rock sugar.

9. Add the taro cubes and simmer for another fifteen minutes.
