However, if a large dose of vitamin C and pentavalent arsenic are ingested and undergo complex chemical reactions, they will be converted into toxic trivalent arsenic. 5. Vinegar: When cooking vegetables, if acidic seasonings are added, their nutritional value will be reduced. Because the chlorophyll in green vegetables is extremely unstable when heated under acidic conditions. The magnesium ions in its molecules can be replaced by oxygen ions in the acid to produce a dull olive pheophytin, which greatly reduces the nutritional value.
