After apple is ripe, due to the effect of ethylene, the content of insoluble pectin between cells in the pulp decreases, the content of soluble pectin increases, the content of fiber decreases, and the intercellular adhesion decreases. When the pulp is immature (that is, it turns into powder), it gradually becomes brittle and soft. At the mature stage, the adhesion between cells is moderate, not as hard as when it is immature, nor as "soft" as when it is about to deteriorate.
However, due to different apple varieties, the degree and speed of intercellular adhesion decrease are different, which leads to different crispness and fineness between apples.
