Composition:
Pineapple 1, pork tenderloin 1, eggplant (purple skin, long) 1, corn (fresh) 1, soy sauce, starch, salt, vinegar, cooking wine, sugar, tomato sauce and salad oil.
Cooking steps:
1. Cut the pineapple in half and cut it into small pieces for later use.
2. Pour soy sauce, cooking wine, starch and salt into the meat for curing.
3. Pour oil into the pot, fry the tenderloin until golden brown, preferably crisp, and drain for later use.
4. Fry the eggplant pieces until golden and discolored.
5. Mix a bowl of juice with soy sauce, salt, vinegar and sugar.
6. There is only a little oil left in the pot. After heating, add tomato sauce and stir fry for a while. Add pineapple pieces, tenderloin, eggplant and corn kernels, then pour in the prepared juice and stir-fry for a while to collect the juice.
