Dark chocolate 70% 315g
Butter 235g
Rum 30g
Butter 50g
Honey 25g
How to make Cuisinart raw chocolate ?
Place the chocolate in the main pan for ten seconds/speed seven.
Break it up
Add the whipped cream, butter and honey for three minutes/50 degrees/speed three.
Add rum, thirty seconds/speed three.
Pour out into a silicone lined box. Place in the fridge for two hours and remove.
Cut the pieces with a sharp knife and place inside a container lined with cocoa powder to coat.
Rewipe the knife clean with each cut.
Roll the edges into rounds and dip them in cocoa powder.
The fancier the cocoa powder you use, the better the texture.
