How to get rid of fishy chicken feet?
Braised chicken feet

Composition:

Chicken feet (proper amount), ginger slices (20g), shallots (30g), garlic (5 petals), bean paste (15g), salt (3g), cooking wine (10g), light soy sauce (5g).

Cooking steps:

1. Remove the chicken feet first, it will taste better. Take out the pot, add some clear water, put chicken feet in cold water, add ginger slices (20g), shallots (15g) and cooking wine (10g), and cook for 5 minutes. This step is to remove the fishy smell of the chicken feet and boil out the residual blood foam in the chicken feet. Wash the chicken feet after blanching with clear water for later use, so as to avoid the blood foam boiled during blanching from touching the chicken feet.

2. Take another pot, add an appropriate amount of cooking oil into the pot, add bean paste (15g) and garlic (5g) and stir-fry the bean paste and garlic red oil with low heat, add chicken feet and stir-fry until the surface of chicken feet is covered with red oil, then add salt (3g), light soy sauce (5g) and star anise.

3. Stir the ingredients in the pot evenly, then add the shallots (15g) and water (beer should have been added, but the beer was for me, so water was used instead). It is very important to add shallots in this step, which can play a key role in enhancing fragrance and removing fishy smell. After the fire boils, turn to low heat and simmer 15-20 minutes. Those who like to eat soft glutinous taste can stew for a long time, and those who like to eat a little chewy will stew for a little less time. After stewing, if there is still a lot of soup in the pot, collect the juice on the fire. If there is no juice, skip the step of collecting juice and go straight out of the pot. Finally, sprinkle some white sesame seeds to look better.

Tips:

1. Cooking wine can only be added when cooking, and cooking wine can also be added when stewing. Chicken feet will contain a little cooking wine.

2. If the clear water used when stewing chicken feet becomes beer, it will taste better and remove the fishy smell of chicken.

Chicken feet can be split in two, which will be more delicious.
