Leeks are cold-resistant and widely adaptable vegetables. The leaves can tolerate short-term low temperatures of -4 to -5°C, and the leaves will begin to wither below -5°C. Because the rhizome stores a large amount of nutrients and is buried under the soil and protected by the soil, it has stronger cold resistance. In Heilongjiang, extreme low temperatures can reach -30°C in winter, and the frozen soil layer can reach 186 cm. When the ground temperature is -15°C, the only vegetables that can survive the winter in the open field are spinach and leeks.
The growth temperature of leeks is 7-30℃, and the suitable growth temperature is 12-24℃. If the temperature exceeds 24℃, the growth will be slow. Especially under the conditions of high temperature, strong light and drought in summer, the fiber of leaves increases, the tissue becomes rough, and the quality deteriorates. However, under protected cultivation conditions, due to high humidity, weak light, and large temperature differences between day and night, even if the daytime temperature reaches above 25°C for a short time, the quality will often not be affected.
Leek seeds can germinate slowly at 5℃, and germinate and emerge fastest at 20℃. Seedling growth requires temperatures above 12°C. When the temperature reaches 3°C in spring, the nutrients stored in the rhizomes begin to support the germination and growth of young shoots. Therefore, it is okay for leeks to be cultivated under protective cover conditions, and the night temperature in winter is 6 to 7°C. As long as the temperature can reach above 15℃ during the day, leeks with wide leaves, tender texture and high quality will slowly grow. If the temperature is too high, the leaves will grow too fast, become thin, light-colored, and of poor quality.
