Steps
1. Prepare the ingredients.
2. Weigh 450g of flour and set aside.
3. Wash the scallions and cut into chopped scallions.
4. Pour the gluten flour into the bread bucket.
5. Place the bread drum back into the bread machine and turn clockwise to lock in position. Gently close the lid
6. Plug it in, then press the menu selection button to the "dough" button, then press the start button. (Default and pasta time 15 minutes)
7. After the machine has started mixing, add the hot water slowly, cover the lid and continue mixing for a while.
8. Slowly add hot water to the dough in two batches.
9. Then pour in the cold water and cover the machine again.
10. A few lumps of dough will stick to the inside of the bucket, so use a soft rubber spatula to scrape them off.
11. When the mixing time is finished, please do not take out the dough for a while, and leave the dough in the machine to relax for 15~20 minutes.
12. When finished, open the cover of the machine and pour the dough onto a work board sprinkled with hand flour (high gluten flour) and sprinkle some hand flour on the dough as well.
13. Use a rolling pin to press the dough to expel the excess air.
14. Divide the dough into 2 to 4 equal portions.
15. Knead each portion of dough into a long strip shape and divide into desired weights.
16. Using a rolling pin, roll out the dough into a flat circle and rub the dough with salad oil, salt and pepper.
17. Roll the dough into a long tube, form a circle around it, sprinkle it with flour, flatten it, and roll it out thinly.
18. Brush the pan with oil and turn on the heat.
19. Put the rolled out scallion pancake into the frying.
20. Both sides of each side of the frying brown, out of the pot after the flavor, cut the plate.
