100 grams of refined salt, a little each of pepper noodles, cooking oil and alkali, and 200 grams of water.
Folding method
1. First put 450 grams of white flour into a basin and add water (water temperature: hot in spring, cool in summer, warm in autumn, boiling in winter), dissolve the alkali in Pour flour into the water and mix into a dough, then add 50 grams of dry flour into the dough, knead evenly and set aside.
2. Stir the cooking oil, refined salt and peppercorns evenly, put it into a small bowl and set aside.
3. Knead the water dough into a long strip, break it into 10 pieces, and flatten them one by one into small rounds with your hands. Then take a small dough ball, steam it with cooking oil, add a little peppercorns and salt and wrap it in the pancake to form a ball. Then use a small rolling pin to roll it into a round pancake, and dry it on a griddle (do not apply oil on the pancake). After baking into light yellow, put it in the furnace and bake it (coke is needed as fuel for the pancake furnace).
