1. Cut the onion and garlic into large pieces
2. Soak the snails in water for at least 1 day and 1 night so that they can spit out the mud and sand, clean them up, and drain them
3. Prepare the dried chili peppers and peppercorns
4. Put oil in a pot and stir-fry the dried chili peppers and peppercorns
5. Add the snails and stir-fry for 1 minute
7. Add the water that has not exceeded the snails, add salt and chicken essence, boil over high heat, and then turn to medium heat and simmer for 20 minutes
Tips
The snails must be soaked in water for at least a day and a night to spit out the mud and sand. Fish bought snails are already spit sediment, so fish only soaked a day and night, cleaning very clean. If you buy snails are not spat out sediment, the time of soaking in water should be longer.
Stewing time is not too short nor too long. Too short may not be enough to kill any parasites or bacteria that may be present, and too long will make the snail meat harden and tighten, making it less easy to pick out.
