When soaking black fungus must pay attention to, if you choose to use cool water, then the time is relatively long, must wait for it to become fresh translucent state when it; if you choose to use hot water to soak the black fungus, then the time is relatively short, generally as long as 15 ~ 20 minutes, but with hot water soaking black fungus, swelling rate is relatively low, so this way is not too mind; if you use salt water to soak, then the amount of salt put in must be controlled, generally 5 grams of salt per 500 milliliters of water, according to this ratio.
In the process of soaking black fungus, be sure to observe the changes in the black fungus, be sure to wait until it is completely soaked and swollen before you can use it to cook, if the soaking is not in place, then do out of the dishes taste worse.
The quality of the fungus grading:
The first level: the ear piece of black brown, shiny, back gray. Fist ear, flowing ear, lost ear, moth ear and moldy ear are not allowed. The flakes are intact and cannot pass through the sieve of 2cm in diameter. The moisture content can not exceed 14%, the ratio of wet to dry is 1:15 or more, the thickness of the ear piece is 1mm or more, and the impurity can not exceed 0.3%.
Second grade: black-brown ear pieces, dark gray back. Fisted ear, flowing ear, lost ear, worm-eaten ear and moldy ear are not allowed. The flakes are intact and cannot pass through the sieve of 1cm in diameter. The moisture content is not more than 14%, the wet/dry ratio is more than 1:14, the thickness of the ear piece is more than 0.7mm, and the impurity cannot exceed 0.5%.
Third level: the luster of the ear piece is mostly dark brown or light brown. Fist ear not more than 1%, not more than 0.5% flow ear. Not allowed to have loss of ear, moth-eaten ear and moldy ear. The ears are small or fragmented and cannot pass through the sieve of 0.4cm in diameter. The water content does not exceed 14%, the wet/dry ratio is 1:12 or more, and the impurity does not exceed 1%.
