First, knead the noodles. Flour, salt, yeast and sugar are all mixed in a mixing basin, and water is added. Jun Baked Chef turns on 1 gear and kneads for 7 minutes. The kneaded dough looks like this. The water absorption of flour is different, please adjust the water quantity according to the actual situation. Don't make the dough too soft. If the dough is kneaded by hand, it should be kneaded vigorously for more than 10 minutes until the dough becomes smooth and elastic. Knead the dough, put it in a pot, cover it with plastic wrap and ferment at room temperature to 2.5 times its size. Crush the dough, roll it out, cover it with plastic wrap and relax for 15 minutes, then roll it out into a rectangular piece (sprinkle a little dry flour to prevent sticking). Evenly coat a layer of vegetable oil on the surface of the dough sheet. Then sprinkle some chopped green onion (chopped green onion can be kept, and it will be a white flower roll). Fold it from side to side. After folding, you get such a long strip of dough. Cut the dough into 12 portions. Take two small pieces of dough and pile them up as shown in the picture. Take a chopstick and press it down from the position in the picture above. Press all the way to the end, and then lift the chopsticks. The dough obtained at this time can be fermented and steamed directly, which is a common shape of flower rolls. If you want to further shape, you can go on to see the following steps. Lift the dough pressed with chopsticks at both ends and stretch it slightly in your hand. Then twist 1 turn like a towel. Finally, the two ends are folded to the bottom, closed at the bottom and pinched, and the shape of the flower roll is completed. After all the rolls are made, put them on the oiled steamer (leave enough space between the rolls). Cover the surface with a wet cloth and ferment in a warm place for 30 minutes. Ferment until the flower roll becomes twice as big, and then it can be steamed. Put cold water on the steamer, and steam on high fire for 18 minutes after the water boils. Turn off the heat after steaming, and wait for 2 minutes before uncovering the lid to avoid the flower roll from collapsing.
