1. Cut the potatoes into thick slices first, and then cut them into long strips.
2. Marinate the meat with beer and starch.
3. Heat the oil until it is 40% to 50% hot, add the meat slices and fry until white.
4. Leave a little base oil, add onion, ginger, garlic and star anise and saute until fragrant.
5. Add potato strips and stir-fry.
6. When the potato strips are fried, add water, meat slices, salt, soy sauce, and two small red peppers and simmer.
7. Cook until the potatoes are soft.
8. Turn off the heat, add coriander and cook.
