How to make leek box

Prepare the ingredients.

Clean leeks, control the water and chopped.

Eggs with a little salt beaten, the pot of oil is hot, pour the egg mixture while frying with a spatula crushed.

First leeks into a small pot, pour a moderate amount of sesame oil and mix well, which can prevent the leeks out of the water, and then into the scrambled eggs and shrimp.

Toss in the salt and mix well clockwise. (
This step is best done when you are wrapping the leeks, as the leeks tend to get watery if the salt is put in early)

Put the flour into a bowl, pour in 70 grams of hot water while stirring with chopsticks to form small lumps, and then add 30 grams of cold water and knead to form a ball of dough, and let it rise for 20 minutes with a piece of plastic wrap on top.

Sprinkle dry flour on the board, take a small portion of the dough and flatten it out, roll it into a disk and put in the filling.

Wrap the leek box with lace as shown in the picture, if you want to make it easier, just do the first step. (

Wrap all the leek boxes in turn.

Heat a pan, add 1 tbsp of oil, add the leek boxes, cover the pan with a lid and simmer for a while.

About 2 minutes, until the surface becomes golden brown, turn the leek box over and continue to simmer on low heat with the lid on for 2 minutes.
