Instructions for making sesame sauce
Sesame paste is not simply sesame paste with sesame seeds, but the traditional old Beijing Erba paste. Sesame paste ground from pure sesame seeds will be bitter, and the paste ground from peanuts and sesame seeds in a certain proportion will not be bitter, but will have a very mellow fragrance.
Sesame should be washed, dried and fried. If you fry directly, there is a lot of water vapor in sesame seeds. When you fry sesame seeds, you should keep stirring. When you hear the sound of cracking, it will be fine when the sesame seeds turn yellow. Don't fry sesame seeds for too long, and the fried sesame seeds will be bitter. If you want peanuts to peel red better, you can put them in the refrigerator for three hours first, so that they can be peeled after frying.
