According to legend, during the Ming Dynasty, the court recruited a large number of soldiers in Jianshui. A young man was selected by the court. On the eve of leaving Jianshui to join the battlefield, the young man’s mother was worried that her son would starve on the road, so she The freshly made tofu was wrapped in pieces of gauze overnight, and then the water contained in the tofu was pressed out with stones to shape it into a tofu fruit shape, which was then put into a package and waited until dawn for the son to take the tofu on the road.
Because of the long journey, my son arrived at the military camp and took out the tofu from the package. The pieces of tofu had already become moldy and smelly. I wanted to throw away this big bag of tofu, but I felt it was a pity, so I grilled the moldy and stinky tofu on the charcoal fire. When the tofu was browned, the moldy and stinky tofu exuded a fragrance. Put a piece in your mouth, bite through the crispy skin, and you will see the heat escaping from the countless honeycomb-shaped holes. When you chew, the juice will splash everywhere, and the taste is excellent.
After returning to his hometown from the military camp, the young man made the same recipe. After the neighbors tasted the young man's baked tofu, they all praised this unique way of eating.
In this way, the way of eating tofu was spread from ten to ten, and every household in Jianshui County learned to bake tofu.
