Steps
1. Wash the eggplant and cut the strips.
2. Wash the thousand sheets and cut them into strips.
3. Remove the seeds and cut the strips, cut the scallions into 4cm long pieces, and slice the garlic.
4. Heat a frying pan, put the garlic slices into the pan and saute.
5. Add the eggplant to the pan and stir-fry for 1 minute.
6. Cover and simmer over medium-low heat for 3 minutes.
7. Uncover and add oyster sauce.
8. Add salt and toss to coat.
9. Add the thousand sheets, stir-fry for two minutes.
10. Finally, add the shredded bell pepper and scallions and stir-fry well, turn off the heat.
11. Plate.
