1. A mandarin fish is about 500 grams. Scrape fish scales, remove gills and internal organs, and put them in a covered container without cleaning.
2. Prepare the seasoning for pickled fish and mix well with cooking wine, minced garlic, salt and spiced powder.
3. Spread the prepared juice evenly on gills, bellies and fish.
4. Cover and marinate at 20-28 for about 5 days.
5. Turn every day.
After 6.5 days, the mandarin fish smells bad. Wash the fish, dry the water and cut off the flowers on the back of the fish.
7. After the oil in the wok is heated, add the fish and fry until both sides are golden, then take it out and leave the oil at the bottom of the wok.
8. Prepare ingredients: lean meat with a little ginger, chopped into powder, dried Chili, minced garlic, chopped green onion and aniseed.
9. Add minced meat, dried peppers and aniseed to the wok, and add ginger slices to stir-fry for fragrance.
10. Add cooking wine and soy sauce to the fried seasoning, boil it with appropriate amount of water, put the fried mandarin fish into the fire, and then cook it on low heat for 20 minutes.
1 1.20 minutes later, the mandarin fish is ripe.
12. Pick up the mandarin fish and put it on the plate.
13. Add minced garlic and chopped green onion to the soup in the pot.
