Amber ginkgo fruit practice:
1. Drying and shell rolling: removing rotten and stiff fruits by water flotation. Drying, baking and shell rolling normal fruits. The drying time varies with the temperature of the drying chamber and the water content of the fruit. After drying, the water content of the fruit drops below 40%, and then the fruit is shelled by sheller or manually.
2. Underwear removal: Put Ginkgo biloba into water, heat it to 95 ~ 100℃, and keep it for/kloc-0 ~15 minutes to loosen the inner seed coat, and then rinse it repeatedly in hot water at 40 ~ 45℃ to remove underwear. After taking off underwear, Ginkgo biloba should be quickly rinsed twice in tap water to remove residues. In time, 1% salt and 0,2% citric acid were used to protect the color of the treated ginkgo biloba to prevent browning.
3. Sugar coating: 50 kg of white sugar, 5 kg of liquid glucose, 1, 5 kg of honey, 30 g of citric acid and 20 kg of water are put into a jacketed pot, heated to boiling, and continuously stirred to fully dissolve the sugar. Add 30 kg of drained ginkgo and cook for 10 ~ 15 minutes. The concentration of sugar solution was above 75% when the fire broke out.
4. Cooling: Take Ginkgo biloba out of the sugar solution, drain the sugar solution, and keep the temperature at 20-30℃ ... If the temperature is too high, sugar will easily dissolve in oil when frying; When the temperature is too low, nuts are easy to agglomerate.
5. Frying: Put the sugar-coated nuts in an iron basket, put them in an oil pan at 150 ~ 160℃ together with the basket, fry the nuts completely without paste and float amber on the oil surface, immediately lift the basket, control the oil, and quickly cool it to about 60℃, and turn it from time to time to prevent the pan from sticking. Frying time 1 ~ 2 minutes.
6. Skimming: Skim the cooled fried nuts on the centrifuge for 2-3 minutes. The finished product is amber, translucent, crisp and waxy, sweet and slightly sour, and the ginkgo fruit has a strong aroma.
