The third step: steamed

Some people like to put the eggplant in boiling water blanching, but personally feel that the method of steaming is better. Because blanching will add eggplant to absorb more water, which is very unfavorable to the later sun.
The fourth step: sun exposure
The steamed eggplants are drained and placed in the sun to dry out, until the eggplants are completely dry, and the sound of rustling will come out when they are rattled. It can also be left to dry in a cool, airy place for 1 night before sun-drying.
The sunshine of the dried eggplant should pay attention to a small detail, that is, when the sun is particularly strong, it is best to cover the top of a newspaper, so that the sun out of the dried eggplant more flavor.
Step 5: Preservation
The dried eggplant can be put into a plastic bag, sealed and put into the refrigerator for freezing and preservation. You can also use a breathable cloth bag, hang it in a dry and ventilated place indoors, and take it out every once in a while to prevent the dried eggplant from getting damp and spoiled.
