The meat used to make rice dumplings needs to be marinated, but does not need to be cooked. It can be wrapped directly into rice dumplings after marinating.
Seasoning
1/2 teaspoon of salt, 1 teaspoon of chicken essence, 1 tablespoon of cooking wine, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 5 grams of caster sugar, 1 teaspoon of ginger powder.
Method
1. Rinse the glutinous rice and let it stand for 20 minutes. Drain the water, then pour the rice into a wooden basin, and add sugar, salt and red soy sauce one by one. Mix well. Peel the pork leg meat, cut it crosswise into small rectangular pieces that are both fat and lean, put it in a basin, add sugar, salt, and white wine, and rub it repeatedly to allow the seasoning to penetrate into the meat;
2. Covered in brown. Put the selected palm leaves into a pot of boiling water and cook for 3 to 5 minutes. Pick up, wash with clean water, straighten and drain. When making rice dumplings, take two palm leaves, with the hairy side facing out, and fold them crosswise into a funnel shape. Hold the palm leaves in your left hand, hold the glutinous rice in your right hand, put 3 small pieces of meat, and put some glutinous rice on top to cover the meat pieces. Fold some of the palm leaves that have grown up to cover the rice, wrap them into a four-cornered three-dimensional shape, into a short and sturdy rectangle, tie them 6 times with water plants, then put the ends of the straw ropes together, turn them three times and stuff them into the grass circles. When wrapping, pay attention to the balance of the four corners, and wrap the water plants tightly without crushing them or tying them;
3. Cook. Bring the water in the pot to a boil, then put the rice dumplings into the pot so that all the rice dumplings are submerged in the water. Use bamboo racks and stones to compact them. Cook over high heat for 1 hour, then switch to low heat to cook. Keep the rice dumplings still while cooking and stop the fire. After simmering for a while, take it out of the pot immediately and peel off the brown leaves when eating.
